Potatoes tossed in masalas, topped with grated coconut, wrapped in a banana leaf and baked.

Ingredients of Spiced Potatoes

  • 1/2 kg potatoes
  • 250 gm chopped capsicum
  • 3 Tbsp peeled garlic cloves
  • 2 green chillies
  • 3
  • 1 Tbsp roasted coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp peppercorns
  • 15 cloves
  • 3
  • 2 chopped onions
  • 6 Tbsp chopped coriander
  • 1 tsp sugar
  • 1 Tbsp haldi
  • 175 ml vinegar
  • Salt
  • 4 Tbsp oil
  • 1/2 grated coconut

How to Make Spiced Potatoes

  • 1.Boil potatoes. Drain, peel and slice.
  • 2.Grind remaining ingredients together, except oil and coconut.
  • 3.Heat oil and fry the masala for 5-7 minutes. Stir in potatoes.
  • 4.Scatter coconut over the top.
  • 5.Cover with foil/wrap in a banana leaf and bake at 180 degrees C for 30 minutes.
  • 6.Serve hot.
