Ingredients of Stir Fried Mushrooms
- 200 gm mushrooms
- 2 bamboo shoots steamed and cut lengthwise
- 1 piece pumpkin-cut lengthwise
- 1 piece winter melon-cut lengthwise
- Chinese cabbage
- Salt to taste
- 1 tsp corn starch
- 1 tsp sugar
- Oil for frying
- Water
- 1 tsp oyster sauce
- 1 tsp soya sauce
- To decorate:
- Rice Noodles
- Prawn seeds (optional)
How to Make Stir Fried Mushrooms

Stuff the bamboo shoot with the pumpkin. Do the same with the winter melon. Now, cut the stuffed pieces horizontally into 4 -5 portions
To make the rice noodle basket:

Press the rice noodle mesh between two steel bowls. Flash fry with the containers to make rice noodle bowls.

Heat water in a wok on a high flame. Put the Chinese cabbage, salt, corn starch, sugar and some oil on top. Fry for 10 seconds. Drain the water and the Chinese cabbage is ready

Now add mushrooms to hot oil. Add salt, corn starch, sugar, oyster sauce and soya sauce. Stir fry on high flame for 10- 15 seconds

Garnish with prawn seeds (if desired) and serve in the rice noodle basket, decorated with the stuffed bamboo shoot and Chinese cabbage.
