The pancake underground Recipe: The recipe we're sharing is our grilled pork belly waffle sandwich. Waffle sandwiches are something we do a lot at The Pancake Underground, since waffles are hearty enough to stand up to a lot of different sandwich fillings, are great for trapping juices and sauces, and go great with either sweet or savory fillings! This one pairs the fatty, salty pork belly with sweetness, acidity, and spice of the apple-jalapeno coleslaw and maple syrup.

Ingredients of the pancake underground

  • Buttermilk Waffles:
  • 4 eggs
  • 3 cups buttermilk
  • 3 tbsp oil or melted butter
  • 3 cups flour
  • 1/3 cups sugar
  • 4 tbsp baking powder
  • A pinch of salt
  • For the apple-jalapeno coleslaw:
  • 1 head cabbage, sliced into strips
  • 2 granny smith or other tart apples, julienned
  • 2 jalapenos, seeded and diced

How to Make the pancake underground

Whisk wet ingredients (eggs, buttermilk, and oil/butter) together in a large mixing bowl.

Add dry ingredients and whisk until just combined (small lumps are OK; don't over-mix).

Ladle batter into waffle maker and cook according to directions.

For the pork belly:

We recommend slicing into small bite-sized strips, seasoning with salt and pepper, and grilling or sautéing until cooked through.

For slaw dressing:

Usually, we just kind of eyeball this, but combine approximately 1.5 cups mayo with about 1/4 cup apple cider vinegar, a pinch of black pepper, and 1/4 cup sugar and whisk until emulsified.

Adjust the vinegar and sugar until you get the balance of sweet and sour you like!

Then combine cabbage, apples, and jalapenos in a large mixing bowl with coleslaw dressing until coated completely. Dress to taste and let sit in the fridge for 30 mins for best results.

Finally, assemble the sandwich! Layer grilled pork belly strips atop the bottom waffle, then add the slaw on top of that, and top with the top waffle. Serve with a side of maple syrup for sweet and savory dipping.
