Tortelli with Lamb and Salsa Di Pomodoro

Aditya Bal goes to Rohit Bal's restaurant Cibo in New Delhi, where along with Italian Chef Andrea they cook up a delightful spinach pasta with a lamb filling and tomato salsa.

Ingredients of Tortelli with Lamb and Salsa Di Pomodoro

  • For the pasta:
  • 3 eggs
  • 300 gm flour
  • 100 gm spinach leaves, pureed
  • 1 liter water
  • 10 gm salt
  • Parmesan cheese, to garnish
  • For the lamb filling:
  • 100 gm shredded lamb
  • 1 cup spinach, boiled
  • Some white wine
  • 1/2 tsp chilli flakes
  • 4-5 cloves garlic
  • Extra virgin olive oil
  • For the salsa:
  • 4-5 tomatoes, skinned and chopped fine
  • 3-4 Tbsp extra virgin olive oil
  • 1 Tbsp thyme
  • A pinch of salt

How to Make Tortelli with Lamb and Salsa Di Pomodoro

Place the flour on a flat and clean surface.

Make a hole in the middle and pour out the eggs.
3.
Whisk them lightly while they lie between the flour.

Once done, slowly mix them with the flour.
5.
Mix in the spinach puree.
6.
Fold the flour with both your hands and gently knead somewhat like a dough.

Knead it for about 8 minutes so that the starch, the protein and the flour all come togethar.

Now wrap it up and let the dough rest and rise for about half an hour.

After which, roll out the dough into a very thin round.

Keep applying some dry flour so that the dough does not stick to the rolling pin.

For the lamb filling:

Saute lamb in some extra virgin olive oil till it becomes slightly brown.

Then let it simmer in a small quantity of white wine in a covered container till the meat is tender.

This is called braising the lamb.

Saute this with boiled spinach, olive oil, garlic and chilli flakes.

Now cut the dough into small squares. Fill the lamb mix in the center and wrap it up.

Now boil about a liter of water with 10 gm salt for every liter of water. As you increase the water the salt content will also increase.

When the water comes to a boil add the pasta to it in small batches.

Once you see it changing colour and is cooked through you can remove it from the water.

This could take about 5-7 minutes.

Once done take them out and keep aside

For the salsa:

In a pan add the tomatoes, olive oil and thyme.

Season with some salt.

Mix well.

Now add the pasta that you cooked to this sauce.

Mix well for about a minute. Be careful not to break the pasta.

Once done plate the pasta and garnish with some Parmesan cheese.
