How to make Veg Mayo Roll

Filled with simple veggies coated in a dressing of thick, seasoned mayo, this veg mayo roll can be a quick bite or a wholesome meal in itself. The stuffing can also be refrigerated and used to fill bread rolls to make an easy party snack. As usual, don’t forget to add a little bit of cheese!

Ingredients of Veg Mayo Roll

  • 1 Onion
  • 1 Capsicum
  • 1/2 Carrot
  • 1/2 Tomato
  • 1/2 Mayonnaise (small)
  • 1/2 cup Corn kernels
  • 1/4 cup Grated cheese
  • 1 tsp Chilli sauce (optional)
  • 1/2 tsp Tomato ketchup (optional)
  • 1 tsp Oregano seasoning
  • 1/4 tsp Paprika or chopped green chillies
  • to taste Salt
  • Olive oil, for stir-frying
  • Lettuce, for garnish
  • 2-3 Rotis

How to Make Veg Mayo Roll

Finely chop the onions, capsicums, carrots and tomatoes. You can also use fresh green chillies now or add paprika later.

Add them one by one into a pan with olive oil over medium flame. Keep stir-frying while adding the next ingredient.

Add corn kernels, and salt and saute together. Cook the veggies for only around 2-3 minutes in total.

Then transfer them into a large bowl and allow them to cool Prepare/ warm chapatis in the meanwhile.

Once the veggies have cooled, add sauces of your choice: tomato and/ or chilli. Mix well.

Add the mayonnaise and mix thoroughly. Add oregano, mix and then taste the filling. Put other seasonings as required (pepper, paprika, etc).
7.
Add the grated cheese to create a thick filling. Spoon the filling into the chapatis, garnish with fresh lettuce and roll tight.
8.
Serve with any sandwich dip or sauce.
