Ingredients of Walnut Lauki Halwa

  • 3 Bottle gourd (lauki)
  • 1 cup Walnuts, finely chopped
  • 1 cup Milk
  • to taste Sugar
  • 3 tbsp Ghee
  • 1 tsp Cardamom powder
  • 3-4 nos Saffron strands
  • Chopped nuts

How to Make Walnut Lauki Halwa

Peel the bottle gourd (lauki) and grate it using a grater. Put the grated vegetable in a muslin cloth and squeeze excess water from it.

Take a pan and put chopped nuts in it. Roast them on medium heat till they turn fragrant and slightly brown. Remove from the heat and set it aside.

In the same pan, take 2 tablespoons of ghee and add grated lauki in it. Saute over medium flame until it becomes soft and the water evaporates. Make sure to stir occasionally for at least 15 minutes.

Once the bottle gourd is cooked, add milk and combine the ingredients. Let it cook on low heat till the milk reduces and thickens, and the mixture turns into a pudding-like consistency. Make sure to stir occasionally so that the mixture does not stick to the pan base.

After the milk is reduced significantly, add sugar as per your taste levels. Mix well so that it dissolves completely in the pudding-like mixture. To this, add toasted walnuts and stir to combine. Cook until the mixture thickens further and starts to leave the sides of the pan.

Now add cardamom powder to the halwa and mix so that it becomes aromatic and tasty.

Once the Lauki walnut halwa reaches the desired consistency, garnish it with saffron strands and chopped nuts like pistachios, almonds, cashews, etc. And voila! it’s done!
