A delightful cake flavored with dates. End your meal with a slice of date cake and dollop of ice cream or savor it as a tea time treat.
Ingredients of Whole Wheat Date Cake
25 - 30 dates (khajur) - seedless
2 cups milk
3/4 cup sugar
2 cups wheat flour
1 tsp baking soda
3/4 cup oil
1 Tbsp cashew nuts (chopped)
1 Tbsp almonds (chopped)
How to Make Whole Wheat Date Cake
1.Chop the dates and soak in milk overnight. (If you don't have time to chop and soak the dates. In a microwave safe cup/bowl add the milk and dates and microwave it for 2 minutes and let it cool for 10 minutes.)
2.Preheat the oven at 220°C.
3.Blend the soaked dates, milk and the sugar and bring it to a smooth paste.
4.Shift it to a bowl and add oil to it.
Now add the flour gradually and mix it.
5.Add the chopped cashew and almonds while saving a little for later on.
6.Line a butter paper to the baking tin.
7.Pour the batter to the baking tin and sprinkle the saved nuts and almonds at the top.
8.Bake at 180°C for 40 minutes or until the toothpick doesn't come out clean.
9.Take out and let it cool for 10-15 minutes.
10.Once cooled turn upside own, remove the butter paper and it's ready to cut :)
