Can you feel the sudden rise in the temperature? Yes, summers have finally arrived. Think summer and the first few things that would come to mind are chilled beverages and soul-soothing treats. Besides sweat, irritation and uncontrollable heat, the summer season brings along a variety of beverages and delicacies like aam panna, lassi, raita and more. These recipes not only cool us down but also help keep the body's water balance and prevent dehydration. One ingredient that holds a special place in this season is curd (dahi). We make a variety of recipes by using this versatile ingredient, for instance, lassi, raita, chaach and more.
Adding to these never-ending curd recipes, here we bring you one more entrant to the list. It is called Dahi Phulki. Similar to North Indian dahi bhalle, dahi phulki involves gram flour dumplings/pakoras dipped in yogurt. Generally, it is prepared during the summer season or in the holy month of Ramadan but you can prepare it anytime. Let's learn how to make it.
Dahi Phulki Recipe: How To Make Dahi Phulki:
To make this recipe, you need to prepare gram flour batter. Add water in gram flour (besan) and keep it aside for 10-15 mins. Then take a small portion out of it and dip it in hot oil, frying until crispy.
Then take a large bowl, fill it with water and drop all the fried pakoras in it and wait until they float. Now, prepare the curd-base. Take curd in a large container, add water and make it a little thin so that fulki can absorb the juice and become soft.
