The rich and vast cuisine of India includes a treasure trove of delicacies dedicated to each and every season. For instance, during the winters, people cook up a storm in their kitchen and come up with a range of drool-worthy ghee-laden traditional sweet delights made with jaggery. One such winter delight happens to be “gur ke pare.” It's a traditional Punjabi food item that can be stored in containers for a longer time. Worry about the recipe? We have it ready for you. Celebrity chef Kunal Kapur has shared the recipe of gur ke pare on his Instagram timeline.

Let us take a look at it:
Ingredients:
1) Maida – 500 gms/2cups
2) Ghee – 150 gms/ ½cup
3) Baking powder – ¼ tsp
4) Baking soda – ¼ tsp
5) Water – 100ml/1cup (approx)
For Syrup
1) Gur (crushed jaggery) – 500gms/ 2½ cups
2) Water – a dash
3) Saunf (fennel seeds) – 1tbsp
4) Ghee – 1 tbsp
Procedure to make gur ke pare:
1) For this, first prepare a dough. Mix together flour, ghee, baking powder and baking soda and rub them together. Now, add some water to make it soft
2) Give it rest for ten minutes and then roll it out about ½ cm in thickness. Give it the shape of your choice and fry it till golden brown on medium hot oil.
3) Now, it's time to prepare the syrup. Melt the gur till it froths up and comes to the crackling stage. So, how will you check if it's perfect? Chef Kunal has a trick. “Drop a little melted jaggery in a bowl of water. Collect the jaggery and make a ball off it and press it between your fingers. If it is getting hard and on dropping, if it makes a loud pop noise then it is ready for the next step,” he said.
2) Turn off the gas and add saunf, fried paras and mix them together. Keep mixing till all the jaggery is coated onto the fried dough (the cubes you had prepared). Now, Separate the ones that stick to each other. Cool them completely and serve them.
