Eating them as it is is not an option as the rotis are too chewy to be consumed. Throwing them out would be ethically wrong and a waste of food. What can be the solution to our problem? The classic Gujarati snack handvo is typically made from a batter of dals and rice and stuffed with lauki (bottle gourd), carrots and coriander leaves. Food blogger Parul Gupta has shared a recipe video that teaches how to make handvo out of leftover rotis.
Roti Handvo Recipe: How To Make Handvo Using Leftover Rotis
Start by breaking the leftover roti into tiny pieces. Grind the broken roti with yoghurt to make a thick paste. In a bowl, add the roti-yoghurt mix along with suji and water. Mix this well and let it rest for 5 minutes. Time to season the batter - add red chilli powder, turmeric powder, salt and ginger-garlic paste. Now add chopped veggies of your choice. This recipe uses onions, carrots, capsicums and lauki. Add some more water and fruit salt, the batter is ready.
To prepare the tadka, heat oil in a pan and add mustard seeds, cumin seeds, hing, coriander seeds, curry leaves and sesame seeds. Now pour the batter into the tadka and let it cook like a handvo. Once it is ready, serve the handvo with tomato ketchup or green chutney.
