Picture this: You have to cook rice for four people, you think cooking two bowls of rice would be enough, only to find out you are left with enough rice to serve four more people! A lot of us often miscalculate the amount of rice to cook and end up with a bit too much. You obviously do not want to toss away the left-over rice, so what can you do. There are plenty of ideas in which you can use last night's left-over rice. You can fry them with veggies and have sumptuous fried rice, you can also use them as stuffing for your parathas. In this recipe, Mumbai-based YouTuber Alpa Modi uses rice to make some crispy and delicious rice pakodas!

In the recipe that Alpa posted on her YouTube channel 'Something's Cooking With Alpa', she uses some left over rice, wheat flour or atta, cilantro, besan, coriander-cumin powder, turmeric, Kashmiri red chillies and chillies. These soft and spongy pakodas are ideal for the nippy monsoon evenings. Team them with spicy chutney and a piping cup of tea and you are good to go. These pakodas are also super easy to prepare and does not take a lot of time in making. A hit with both kids and adults alike, you can even pack these pakodas for lunch, picnic or train journeys.
