The cafe first picks ground coffee beans to make espresso manually, as the coffee prepares, they take a container filled with water and boil it. This step is followed by dropping an egg in the hot water and waiting for a few minutes. The egg white is strained out and put the egg yolk in the hot coffee; it is said that this step of separating egg whites from the egg yolk will keep the egg from clumping up in the cappuccino. This step is followed by whisking heavy cream in to foam and then carefully added to the coffee, topped with loads of cocoa powder and served. The egg yolk basically helps mellow down the strong coffee, so you don't feel it is too bitter. Also, it makes the consistency of the coffee slightly thicker than a usually cup of cappuccino. There is also no taste of the almost raw yolk.Before this beverage got popular in New York, a slightly different version became the go-to drink in Vietnam and Korea. The egg coffee here is generally made by beating the egg yolks along with sugar and coffee. The coffee is extracted into half a cup, followed by a similar amount of egg cream, which is prepared by heating and beating the yolk along with condensed milk.
