However, the traditional pickles take some time to get ready and you've got to follow the process of fermentation and make the pickle sit in sunlight for days. But we have an idea that can help you eliminate the whole process of fermentation. Yes, food vlogger Parul has shared a delicious recipe for an instant mix pickle on her YouTube channel “Cook With Parul.” The heavenly treat can be prepared quickly in five minutes with the basic ingredients easily available in this season - radish, carrots, green chillies, and ginger. You also have to use some homely traditional spices, of course.

Winter-Special Achar Recipe: How To Make Instant Mix Achar:
Ingredients:
1)Radish - 2
2) Carrots - 2
3) Green chillies - 15-16
4) Chopped ginger - 2 inch
5) Mustard seeds - 2 tablespoons
6) Yellow Mustard seeds - 1 tablespoon
7) Black peppercorns - 12 to 15
8) Cumin seeds - 1/2 tablespoon
9) Fenugreek seeds - 1/2 tablespoon
10) Coriander seeds - 1 tablespoon
11) Aniseed - 2 tablespoons
12) Carom seeds - 1/2 tablespoon
13) Kashmiri red chilli powder - 2 tablespoons
14) Turmeric powder - 1/2 tablespoon
15) Kalonji (onion seeds) - 1/2 tablespoon
16) Mustard oil - 1/2 cups
17) Asafoetida/hing - 1 tablespoon
18) Salt to taste
19) White vinegar – 1 tablespoon
How to make instant mix achar?
Step 1: Wash and peel off radish and carrots nicely. Wash green chillies and wipe them dry. Now, remove the unwanted stem from the chillies as that may spoil the pickle. Also, it's absolutely optional to use ginger in this achar. You can put the same because ginger enhances the taste of the delicacy and it's good during winter.
Step 2: Now, cut the ingredients. However, follow the steps as shown in the video. The chef stated that you need to be very specific when it comes to cutting. Cut radishes and carrots in juliennes. Cut the green chillies into two parts first. Split them vertically from the centre. Cut ginger also into perfect juliennes.
Step 3: Now, make the special achar masala. For this, heat a pan on a low flame. Now, roast the ingredients together. Take a grinding jar and blend the mixture together. Don't make a fine powder, rather go for a coarse mixture.
Step 4: Now, in the masala, put Kashmiri red chilli powder, turmeric powder and kalonji. You can store this masala for quite some time. You can also use it for making achari mathri, achari parathi, bharwa baingan.
Step 5: Now, for the main pickle, heat a kadai with some mustard oil in it. Add hing and put all the chopped vegetables. Mix everything perfectly on low flame. Just cook it for 2-3 minutes. Do not overcook.
Step 6: Sprinkle the special achar masala from the top. Put salt as per your taste. In the end, don't forget to put white vinegar in it. This ingredient will not only provide the much-needed sourness to the pickle but will also work as a preservative. After vinegar, just cook for 30 seconds and your instant pickle is ready.
