Ingredients of Aam ka Pachranga Achaar

  • 8 carrots-scraped and cut into desired sized pieces
  • 2 cups mango-cut into small pieces
  • 2 cups cauliflower flowerets
  • 3 cucumbers-cut to match other vegetables (unpeeled)
  • 1 cup shelled peas
  • 1 cup salt
  • 3 tbsp chilli powder
  • 1 tbsp powdered mustard seeds
  • 1/4 cups vinegar
  • 1 tsp fenugreek seeds powder
  • 1 tsp turmeric powder
  • 1 cup mustard oil

How to Make Aam ka Pachranga Achaar

Mix carrots, mangoes, cauliflower, cucumbers, peas and salt and leave for 3-4 hours.

Drain the vegetables well and discard the liquid.

Mix the vegetables, chilli, mustard, vinegar, fenugreek, turmeric and oil. Transfer to a jar and leave to mature, stirring once or twice a day.

The pickle will be ready to eat in 6-7 days.
5.
You can add permissible red color if you want it to look brighter.
