Ingredients of Air Fryer Cheesy Malai Broccoli

  • 1 head broccoli (two small or 1 medium-sized)
  • 1 cup malai (fresh cream)
  • 1/2 cup grated cheese
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon black pepper
  • 1 tablespoon garam masala powder
  • 1/2 teaspoon red chilli powder
  • Salt (as per taste levels)
  • 2 tablespoons lemon juice
  • Oil/Ghee/Butter
  • 1/4 cup spring onion, chopped (optional for garnish)
  • Dry herbs (for garnish)

Wash the broccoli and separate the florets from its head. You can take a large broccoli head or a medium one but make sure it gives out more than 6-7 florets.

Take a pan and fill it with water. After it begins to boil, add salt in it along with the washed broccoli florets. Keep it in the water for 15-20 seconds before transferring it to cold water. Take broccoli florets out after a few seconds and drain the water.

In a large bowl, combine malai, grated cheese, ginger-garlic paste, lemon juice spices – garam masala, red chilli powder, black pepper powder, and salt, and mix well. Make sure all the ingredients are combined well and there are no lumps.

Toss the broccoli florets in the malai mix. Add 3 spoons of ghee/oil and mix well until the vegetable is coated properly in the mixture. At this point, you can add spices as per your preference and taste.

Preheat the air fryer to 190°C. Line the air fryer rack with parchment paper so that it does not stick to the bottom.

Place the coated broccoli florets in the air fryer basket in a single layer. Make sure not to overcrowd the rack and keep the florets spaced out. Cook the cheesy malai broccoli in the air fryer for 12-15 minutes.

Keep an eye on the cheesy malai broccoli. Cook them until they are golden brown in colour and shake the basket halfway through to ensure even cooking time.

Once the cheesy malai broccoli is done, remove it from the rack. Sprinkle some chaat masala on top of them or pour some melted butter to enhance the taste. Garnish it with dry herbs and chopped spring onion and voila! Your air fryer cheesy malai broccoli is ready to serve!
