Amiri Khaman (Sev Khamani) Recipe: This Gujarati snack is a delicious way to transform leftover khaman or dhokla. Cooked khaman is crushed, mixed with a special tadka (tempering) and topped with grated coconut, pomegranate seeds, sev and more. Ingredients of Amiri Khaman (Sev Khamani)

  • 10 khaman/ dhoklas
  • 1 tbsp oil
  • 1/4 tsp mustard seeds
  • 1/4 tsp white sesame seeds
  • 2 Green Chillies, finely chopped
  • 2 garlic cloves, finely chopped (optional), finely chopped
  • small onion, finely chopped
  • 1 sprig curry leaves
  • 2 pinch of asafoetida (hing)
  • 1/4 tsp turmeric (haldi) powder
  • 1/2 tsp sugar
  • 1 tbsp coriander, chopped
  • 2 tbsp freshly grated coconut
  • 1 tbsp pomegranate seeds
  • 1 tbsp lemon juice
  • 1/2 cup sev
  • Salt to taste

How to Make Amiri Khaman (Sev Khamani)

Crush the leftover cooked khaman with your hands and set aside in a bowl.

In a kadhai, heat oil and add asafoetida, mustard seeds, white sesame seeds, green chillies, garlic and curry leaves.

Then add turmeric, salt, sugar and the chopped onion. Saute for a minute or two.

Add the crushed khaman and mix well. Turn off the heat.
5.
Add grated coconut, lemon juice, pomegranate seeds and coriander leaves. Mix all the ingredients.
6.
Finally, top with sev and serve immediately.
