Ingredients of Khaman Dhokla
- For Batter
- 1 Gram flour (besan)
- 1 tbsp (optional, for texture) Semolina (rava/sooji)
- 1 tsp Ginger-green chili paste
- 1 Sugar
- 1/2 tsp Turmeric powder
- 1 Lemon juice or white vinegar
- salt
- ENO fruit salt – 1 sachet (1 tsp) or ½ tsp baking soda
- ¾ cup (adjust as needed) Water
- For the Tempering:
- 1 ½ tbsp Oil
- 1 tsp Mustard seeds
- Sesame seeds – 1 tsp (optional)
- 2 slit Green chilies
- Asafoetida (hing) – a pinch
- 8-7 Curry leaves
- 2 Water
- 1 Sugar
- Lemon juice
- Garnish
- Fresh coriander leaves, chopped
- Fresh grated coconut (optional)
How to Make Khaman Dhokla

In a mixing bowl, combine besan, semolina, turmeric, salt, sugar, ginger-chili paste, and lemon juice.

Gradually add water and whisk until the batter is smooth and lump-free.

Just before steaming, mix in ENO fruit salt and stir gently. The batter will rise and become frothy.
Steam the Dhokla
1.
Grease a steel plate or thali. Pour the batter into the plate and place it immediately in a preheated steamer.

Steam for 15–18 minutes on medium heat. Insert a toothpick to check doneness—it should come out clean.

Let the dhokla cool slightly, then cut into squares.
Prepare the Tempering
1.
Heat oil in a small pan. Add mustard seeds and let them splutter.

Add sesame seeds, green chilies, hing, and curry leaves.
3.
Mix in water, lemon juice, and sugar. Bring to a quick boil.
4.
Pour this tempering evenly over the steamed and cut dhokla.
To Serve
1.
Garnish with chopped coriander and grated coconut. Serve with green chutney or sweet tamarind chutney for a complete experience.
