Ingredients of Barley Risotto with Marinated Chicken

  • For Risotto:
  • 100 gms pearl barley
  • 50 gms butter
  • 1 onion, finely chopped
  • 2-3 Garlic cloves
  • 1 stalk spring onions , chopped
  • 100 ml white wine
  • 500 ml stock
  • A small bunch of parsley
  • A small bunch of chives
  • A small cup of parmesan cheese
  • to taste pepper
  • For the Chicken:
  • 2 Chicken thighs
  • 1 red bell pepper
  • 2 fresh red chillies, roasted
  • 1 tbsp cumin
  • 1 tsp paprika
  • 2-3 garlic cloves
  • A small bunch of oregano
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 cup tomato puree
  • A small bunch of thyme

How to Make Barley Risotto with Marinated Chicken

  • Prepare Risotto:
  • 1.In a pot with some olive oil melt some butter. Add some finely chopped onions, garlic, risotto(barley).
  • 2.Bring to a slight boil and add stock and white wine. Chop up some spring onions.
  • 3.Grate in some parmesan cheese and sprinkle with some black pepper. Heat till reduced. Garnish and serve.
  • Prepare Chicken:
  • 1.Marinate the chicken thigh with the ingredients and set in oven for 20 minutes at 200 degrees.
