Beetroot and Green Apple Soup

A mild concussion, this soup has the freshness of apple and the earthiness of beetroot. A bowl of this before dinner will set your palate for the dishes to follow.

Ingredients of Beetroot and Green Apple Soup

  • 4 medium beetroots, peeled
  • 1 1/2 green apples
  • 1 medium onion, peeled
  • 1 tbsp olive oil
  • Salt to taste
  • Crushed black peppercorns to taste
  • 1/2 Tbsp butter
  • 2-2½ cups vegetable stock
  • ½ tsp mixed dried herbs
  • ¼ cup fresh cream
  • 1 tbsp lemon juice
  • Parsley sprigs for garnishing
  • Red chilli flakes for sprinkling
  • Soup sticks as required

How to Make Beetroot and Green Apple Soup

  • 1.1. Chop onion into medium pieces.
  • 2.2. Heat olive oil in a non-stick pan. Add chopped onion and sauté for a minute.
  • 3.3. Finely chop beetroots, add to pan, mix and cook till done.
  • 4.4. De-seed and chop apples, add to pan, mix and cook for a minute.
  • 5.5. Add salt, crushed peppercorns and butter and mix well.
  • 6.6. Add vegetable stock, mix and cook till it comes to a boil and the beetroots soften.
  • 7.7. Switch off heat and add mixed dried herbs.
  • 8.8. Blend the prepared beetroot mixture along with fresh cream to make a smooth puree.
  • 9.9. Strain the puree into the same non-stick pan.
  • 10.10. Add lemon juice and mix well.
  • 11.11. Pour the beetroot mixture in individual square glasses, garnish with parsley sprigs, sprinkle some chilli flakes on top and put soup sticks in each glass.
  • 12.12. Serve hot.
