Ingredients of Beetroot and Green Apple Soup
4 Medium beetroots, peeled
1 1/2 Green apple
1 medium onion, peeled
1 tbsp olive oil
to taste salt
to taste black peppercorns (crushed)
1/2 tbsp butter
2-2 1/2 cups vegetable stock
1/2 tsp mixed dried herbs
1/4 cup fresh cream
1 tbsp lemon juice
for garnishing parsley sprigs
for garnishing Red chilli flakes
Soup sticks as required
How to Make Beetroot and Green Apple Soup
1.Chop onion into medium pieces.
2.Heat olive oil in a non-stick pan. Add chopped onion and sauté for a minute.
3.Finely chop beetroots, add to pan, mix and cook till done.
4.De-seed and chop apples, add to pan, mix and cook for a minute.
5.Add salt, crushed peppercorns and butter and mix well.
6.Add vegetable stock, mix and cook till it comes to a boil and the beetroots soften.
7.Switch off heat and add mixed dried herbs.
8.Blend the prepared beetroot mixture along with fresh cream to make a smooth puree.
9.Strain the puree into the same non-stick pan.
10.Add lemon juice and mix well.
11.Pour the beetroot mixture in individual square glasses, garnish with parsley sprigs, sprinkle some chilli flakes on top and put soup sticks in each glass. Serve hot.
