Ingredients of Beetroot Chicken Soup
- 250 gms Chicken
- 5-6 Garlic Cloves
- Small ginger piece
- 2 Medium Onions
- 2 Medium Beetroots
- 1 tsp Black Pepper
- 2 Tbsp Butter
- Salt according to taste
- Some chopped coriander
- Spring onions (Optional)

In a pan add the chicken, whole ginger, one onion, 2-3 garlic cloves, black pepper and salt, and 1-liter water. Let this boil for 5-10 minutes.
Keep removing the gunk accumulating on the surface. Once it is boiled and clean, sieve and keep the chicken stock aside.
Shred chicken into tiny pieces and keep aside. In another pan add butter, remaining garlic, and onions roughly chopped and cook for a while.
Now add the chicken stock and check for the taste of black pepper and salt before adding some more.
Add small chunks of beetroot and some extra water.
Cover the lid and let this boil until the beet is mushy. Add the shredded chicken and let it boil for a couple of extra minutes.
Garnish with chopped coriander and spring onions and serve hot.
