Bhapa Doi Recipe:This steamed Bengali delicacy is popular during festivals. However, its simple preparation method and evergreen flavours make it a great choice at any time. Served chilled, bhapa doi makes for an especially refreshing summertime treat. You can add ingredients such as saffron (kesar), mango pulp, rose syrup, orange crush, etc. to this basic recipe and make a special, flavoured bhapa doi.

Ingredients of Bhapa Doi

  • 1 Cups hung curd
  • 1 cup milk
  • 400 gram condensed milk
  • 1 tsp cardamom (elaichi) powder
  • 1 tsp corn flour (optional)
  • pistachios (for garnish), chopped

How to Make Bhapa Doi

In a large bowl, mix the hung curd and condensed milk using a whisk.

Add the milk, cardamom powder and corn flour to the bowl. Ensure that no lumps are formed while whisking.

Add flavours or chopped nuts of your choice and mix.

Transfer the mixture to a deep-bottom metal container or similar bowls. Seal with aluminium foil or a tight lid.

Place this container in a double steamer on the stovetop and cook for around 25 minutes on low flame, until fully set.

Alternatively, you can use an oven for cooking the bhapa doi. Preheat the oven to 180 degrees C for 8-10 minutes. Transfer the mixture into microwave-safe bowls, seal with foil and place them in a hot water bath. Steam for 20 minutes at around 160 degrees C.

Allow the bhapa doi to cool before refrigerating. Serve chilled and garnish with chopped pistachios.
