  • 3-4 cardamom pods
  • 3-4 cloves
  • 1 large onion, finely chopped
  • 1 tbsp ginger, minced
  • 1 tbsp garlic, minced
  • 1 cup tomato puree
  • 1 cup water or chicken broth
  • Fresh coriander leaves for garnish (optional)

In a bowl, combine the chicken pieces with freshly ground black pepper, turmeric powder, and salt.
Let the chicken marinate for at least 30 minutes.
Heat mustard oil or ghee in a pan over medium heat.
Add cumin seeds, cardamom pods, and cloves. Let them sizzle for a few seconds, releasing their aroma.
Add finely chopped onions to the pan. Sauté until they turn golden brown.
Add minced ginger and garlic, continuing to sauté until the raw smell disappears.
Add the marinated chicken pieces to the pan. Cook until the chicken turns golden brown on all sides.
Pour in the tomato puree and mix well, ensuring the chicken is coated evenly.
Let the mixture cook for a few minutes until the oil starts to separate.
Add water or chicken broth to achieve the desired consistency for the curry.
Allow the curry to simmer on low heat. Stir occasionally.
Taste the curry and adjust salt and black pepper according to your preference.
