Bubbly Hot Corn Dip: This dip is “hot” for two reasons: it is full of spicy ingredients and it is baked to form a yummy layer of melted cheese before serving. This dip is perfect to be scooped up with tortilla chips or any type of crackers. It can quickly be made as an attractive appetiser for parties and dinners.

Ingredients of Bubbly Hot Corn Dip

  • 1 Tbsp butter or olive oil
  • 1 1/2 cups corn kernels
  • 2 tbsp mayonnaise
  • 3/4 cup cheese
  • 3-4 tbsp cream cheese
  • 1 small onion
  • 1 red or green capsicum (diced )
  • 2 garlic cloves , finely chopped
  • 1 tsp chilli flakes
  • 1 tbsp chilli sauce
  • 1/4 tsp black pepper
  • 1/2 tsp oregano
  • jalapeños
  • to taste Salt

Preheat the oven to 350- 400 degrees F

In a saucepan, heat butter or olive oil. Lightly saute onion, capsicum and jalapeños (add only if you wish extra spiciness).

Add the chopped garlic, mix and continue to saute for a minute.

Transfer the mixture to a bowl and allow it to cool for around 5 minutes.

Add the boiled corn, cream cheese, 1/2 cup grated cheese, mayonnaise, chilli sauce, paprika, pepper and other seasonings to taste.

Mix well using a large spoon. Transfer the mixture to a baking dish.
7.
Spread the remaining cheese on top and bake for 15-20 minutes until the dip is bubbly.
8.
Serve with nachos, potato chips, crackers or pita bread.
