To Make The Sauce
Start by heating the cooking oil in a wok or a pan over medium flame. Once the oil is steaming toss in the chopped onions and sliced garlic.
When the onion starts turning translucent bring to flame down to low and continue sautéing it for another 3 minutes or so .
Sprinkle the red chili flakes , oregano and add in the tomato sauce and Kolhapuri Jhatka sauce.
Continue to sauté for a few minutes. Then pour in the puree and add the salt. Keep it simmering for 15-25 minutes till it starts to boil and thicken.
For Penne Pasta
Cook as per directions on the packaging. Once done , add the pasta to about three fourths of the pasta sauce and mix till all of the pasta is doused in sauce. Reserve some of the sauce for layering.
Transfer the pasta and sauce into a baking dish and spread it evenly. Sprinkle and cover the pasta with half of the grated mozzarella and all of the processed cheese . Then top it up with the sauce that you reserved . Finish by adding left mozzarella.
Preheat oven to 400 degrees.
Bake for 10 minutes until the saucy is bubbly and the cheese all melty on the top and crusty on the sides. Take the dish out of the oven and sprinkle some parmesan cheese or cracked black pepper.
Your baked decadence is ready to be served!
Additional note: Add vinegar to the water to prevent pasta from sticking.
