350 ml milk 1/4 onion- sliced 1 sliced carrot 1 stick celery 3-4 parsley stalks 3-4 mushrooms 1 tsp mustard powder 1/4 tsp peppercorns grated nutmeg 1 bay leaf salt 25 gm flour 1 tsp flour To finish 2-3 tbsp grated cheese 1 tsp prepared mustard coarsely ground black pepper
How to Make Cheese Sauce
1.Boil milk with onion, carrot, celery parsley, mushrooms, mustard powder, peppercorns and herbs. Set aside for 30 minutes and strain. Melt butter in a saucepan and stir in flour. Cook for 2 minutes before pouring in reheated milk. Simmer for 3-4 minutes. Remove from heat and stir in remaining ingredients. Serve with vol au vents, patties or baked cauliflower.
