Ingredients of Coconut Pineapple Karanji

  • 260 gms Rava
  • 180 gram Flour
  • 240 ml Milk
  • 15 gram Ghee
  • 3 gram Cardamom Powder
  • Ghee For Frying
  • For The Filling
  • 200 gram Desiccated Coconut
  • 150 gram Sugar
  • 220 gram Chopped Pineapple
  • 30 gram Khoya
  • 20 gram Raisins
  • 5 gram Cardamom Powder

How to Make Coconut Pineapple Karanji

Add ghee to the refined flour, rava, cardamom powder and knead a tight dough with cold milk.

Cover the dough with a cloth to keep it moist.
3.
Sauté pineapple in a pan for a minute and add raisins. Stir the mixture until it gets dry.

Add desiccated coconut to the mixture. Mix sugar into the pan and turn off the heat. Let it cool down a bit.
5.
Add Khoya to the mixture and mix well. Roll out small Puris of the dough and place the stuffing on one half of the puri.
6.
Cover the stuffing with the other half of the puri and seal the dough by pressing the corners with a fork.
7.
Deep fry on low heat in ghee. Once it reaches light golden color remove from heat and place on absorbent paper.
8.
Garnish with honey, chopped Pistachios and serve.
