Ingredients of Corn Salad
- 1 can whole corn kernels
- 1/4 cup red onion, finely chopped
- 1/4 cup cherry tomatoes (cut into halves)
- 1 Avocado (sliced or cut into small chunks)
- 2 tbsp soft cheese
- 2 tbsp extra virgin olive oil
- 1-2 tbsp salt
- to taste pepper
- 1 Lemon (juiced)
- 1-2 tbsp fresh parsley, finely chopped
How to Make Corn Salad
- 1.Prepare the salad dressing first by combining olive oil, lemon juice, parsley, salt, and pepper. Whisk well.
- 2.Combine corn kernels, tomato, onion and avocado in a bowl. Pour dressing over the salad.
- 3.Add cheese, gently toss and serve the corn salad.
