Sabayon is a custard-like Italian dessert. Here, it is served with a light sponge and freshly made strawberry sauce.

Ingredients of Sabayon with Strawberry Sauce

  • For the sponge:
  • 4 eggs - separated
  • 125 gm castor sugar
  • 125 gm flour
  • 1 tsp cocoa powder
  • For the fruit:
  • 1/2 kg assorted seasonal fruit
  • 1/2 kg pureed strawberries
  • 2-3 Tbsp icing sugar
  • For the sabayon sauce:
  • 3 egg yolks
  • 75 gm castor sugar
  • 100 ml orange juice

How to Make Sabayon with Strawberry Sauce

  • For the sponge:
  • 1.Whip whites until stiff. Gradually whisk in sugar. Fold in yolks followed by flour.
  • 2.Spread/ pipe out in 3" rounds on a greased and floured baking sheet. Dredge with cocoa powder.
  • 3.Bake at 190 degrees C for 10-12 minutes. Remove from oven and cool.
  • For the sauce:
  • 1.Strain strawberries and whisk in sugar to sweeten.
  • 2.Spoon a little sauce on a plate. Top with a sponge round. Cover with fruit.
  • For the sabayon:
  • 1.Beat yolks and sugar until white. Place bowl in pan of simmering water.
  • 2.Continue whisking over a gentle heat gradually pouring in the juice.
  • 3.Allow it to thicken and become mousse-like.
  • 4.Spoon over the fruit. Serve decorated with mint leaves.
