Ingredients of Green masala egg curry
- 6 Nos Boiled eggs
- 1 cup Chopped Coriander
- 1 cup Chopped Mint
- 2-3 Green chilli
- 1/2 cup Onion paste
- Medium sized ginger
- 6-8 Garlic cloves
- 1/2 tsp Jeera powder
- 1/2 tsp Dhaniya powder
- 1/2 tsp Garam Masala
- Red chilli powder as required
- Haldi as required
- Salt as required

Boil 6 eggs and peel them, slice the outer layer with light hands, not cutting all the way through.

Marinade this egg in salt, red chilli powder and haldi for 5-10 mins.

While the egg is marinating, let’s prepare the green paste. In a grinder add coriander, mint, green chilli, ginger and garlic and make a fine paste.

Now fry those marinated eggs slightly and remove.

In the same pan, add cumin seeds and let it crackle. To this add onion paste, dried masalas like jeera powder, dhaniya powder, haldi, red chilli powder and salt.

After all the masalas are mixed and cooked properly, add the green paste. Add water to adjust consistency.

At the end add fried eggs and garam masala and cook for around 2-3 mins.

Remove from heat, serve and enjoy hot.
