About Kesar Kulfi Recipe: Kulfi is one of the most loved summer dessert from Indian cuisine and is also popular in the neighbouring countries as well. It is similar to an Ice cream but is denser and not light in texture. It is made by evaporating milk and sweetened with sugar. Flavouring ingredients like saffron and cardamom powder are added along with ground or chopped nuts.

Ingredients of Kesar Kulfi

  • 2 Cups Milk
  • 1 cup Condensed Milk
  • 2 tbsp Cornflour
  • 1 tsp Cardamom Powder
  • 2 tbsp Almonds crushed
  • 1 tbsp Cashews crushed
  • 2-3 Cardamoms crushed
  • 10-12 sticks Saffron

Take milk in a pan, bring to simmer while stirring.

Add condensed milk to the pan.

Stir well.

Now add crushed cardamoms to the pan.

Stir thoroughly and bring it to boil.

Add chopped cashews and almonds to the boiling milk, stir well.

Take the cardamom powder, saffron and cornflour separately dissolved in a tsp of milk, add them to the boiling milk mixture.

Stir it thoroughly to make a thick consistency.

Keep it aside to cool down completely.

After it has cooled down, put the thick paste in to separate moulds of kulfi. .

Refrigerate the moulds for 7-8 hours.

Serve the chilled frozen kulfi, sprinkled with almonds and cashews
