Ingredients of Kumaoni Jholi

  • 1/2 Cup besan
  • 2 cups dahi
  • 1 cup vegetables of your choice, diced
  • Salt as per taste
  • 1/2 tsp Kashmiri red chilli powder
  • 1/2 tsp haldi
  • 1/2 tsp hing
  • 1 tsp jeera
  • 1 tsp dhania powder
  • 2 whole red chilli
  • 1 tbsp garlic , chopped
  • 1.5 tsp coriander leaves, chopped

How to Make Kumaoni Jholi

Beat besan in curd, with salt, red chilli, and turmeric. Keep aside.

Heat a pan and add ghee/oil.
3.
Add vegetables and saute with dhania powder and salt.
4.
Add besan-curd mix to it and cook on low flame.
5.
Wait till the sabzi is done. Add some water (preferably whey water) if it turns thick.
6.
Heat a tadka pan and add ghee to it.
7.
Add whole red chilli, garlic, cumin, and hing, and prepare a tadka.
8.
Add to the kadhi and mix.
9.
Garnish with freshly chopped coriander leaves and close the lid.
10.
Let the flavours infuse and then, serve hot with rice.
