  • 1 Cup leftover cooked rice
  • 1 cup all-purpose flour
  • 1 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk/milk
  • 1 large egg
  • 2 tbsp melted butter/oil
  • 1 tbsp vanilla extract (optional)

How to Make Leftover Rice Pancakes

In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix well.
In a separate bowl, whisk together the buttermilk/milk, egg, melted butter (or oil), and vanilla extract (if using).
Add the wet ingredients to the dry ingredients, and gently mix until just combined.
Fold in the leftover rice into the pancake batter.
