Ingredients of Maharashtrian Moogacha Bhaat (Moong Sprouts Rice)

  • 1 Cup rice
  • 1 cup sprouted green moong
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 3-4 green chillies, finely chopped
  • 1 tsp ginger garlic paste
  • 1/2 cup coriander leaves
  • 1/2 cup mint leaves
  • 1 tsp cumin seeds
  • 1 tsp chilli powder
  • 1 tsp garam masala
  • 1/2 tsp haldi powder
  • 1-inch cinnamon stick
  • 4 cloves
  • 6-8 peppercorns
  • 1 star anise seed
  • 4 green cardamoms
  • 2 bay leaves
  • 2 tbsp oil
  • Salt to taste
  • 3 cups hot water
  • 1 tsp lemon juice
  • Extra coriander leaves for garnish

How to Make Maharashtrian Moogacha Bhaat (Moong Sprouts Rice)

Wash and soak the rice for half an hour.

In a heavy-bottomed saucepan or kadhai, heat oil and add cumin seeds followed by the whole spices listed above (cinnamon, cloves, etc.).

Add the ginger garlic paste and saute for a minute or so until the rawness goes away.

Add the sliced onion. Once it turns translucent, add the chopped tomato and green chillies.

Add haldi, chilli powder, garam masala and 2 tsp salt. Add the mint and coriander leaves.

Let it simmer on low flame for around 5 minutes, till the mixture leaves the oil.

Add the moong sprouts and the rice (after draining) to the vessel.

Pour in 3 cups of hot water. Stir and cover the vessel. Allow the dish to cook on low flame for 15-20 minutes.
9.
Later, squeeze lemon juice on top, garnish with chopped coriander leaves and serve hot.
