Ingredients of Motichoor Rabdi Petit Entremet

  • For rabdi mousse:
  • 250 gms milk
  • 20 gms custard powder
  • 1 tsp sugar
  • 150 gms whipped cream
  • 400 gms rabdi
  • 20 gms sliced pista
  • 20 gms sliced almonds
  • 400 gms white couverture chocolat
  • 150 gms cocoa butter
  • 4 drops yellow colour
  • Sliced pistachios to sprinkle

How to Make Motichoor Rabdi Petit Entremet

To prepare the custard, boil milk and sugar then add custard powder. Cook for a few minutes and then transfer in a bowl, allow sometime to cool.

Fold in whipped cream, rabdi and nuts. Put mousse in the mould with motichoor crumb and freeze overnight.
3.
Remove rabdi mousse from mold and coat with white chocolate coating.
4.
Served on banana leaf with some chopped nuts, motichoor crumbs and rose petals.
