This amazingly healthy and delicious Greek-inspired salad recipe is what you need to satiate your hunger without compromising on the taste buds. Olive and pepper salad is a simple mix of ripe olives with veggies, seasoned with just the right amount of lemon juice and spices to have a fresh and tangy taste.

Ingredients of Olive and Peppers Salad

  • 1/2 Cup Ripe olives
  • 1 Red bell pepper (1/4-inch cubes), chopped
  • 2 Capsicum (cut in roundels)
  • Cucumber (seeds removed and cut into 1/4-inch cubes)
  • 2 Tbsp Lemon juice
  • 1/4 Cup Garlic infused with olive oil
  • To taste Salt
  • To taste Black pepper (freshly cracked)

How to Make Olive and Peppers Salad

  • 1.In a medium bowl, toss together olives, lemon juice and oliv eoil infused garlic to make vinaigrette.
  • 2.In a plate, arrange roundels of capsicum and cucumber neatly, sprinkle lemon juice and olive oil. Season with salt and pepper, to taste.
  • 3.Right before serving pour vinaigrette over olive mixture and serve.
