1.
Wash and peel the oranges. Remove any seeds you can find and chop the flesh into small pieces.
2.
Take a pan and add vegetable oil to it. Once it’s hot, add mustard seeds and allow them to splutter. Now add cumin seeds. Saute until it gives out a nice aroma.
3.
Lower the heat and add turmeric powder, red chilli powder and hing. Stir well to combine the ingredients.
4.
Now add chopped oranges to the pan and mix so that the spices coat the fruit. Cook the oranges for about 15-20 minutes and stir occasionally till it's soft and the mixture is thick.
5.
To this, add sugar and salt to balance the taste. Keep mixing until the sugar is completely dissolved.
6.
At this point, if you feel the chutney is too sweet and sour, add dried red chillies and let the mixture cook on a simmer for another 10 minutes or until it has a chutney-like consistency.
7.
Once it's done, add vinegar and stir well. Adjust the taste as per your preference and remove the chutney from the pan once done.
8.
Let it cool down and serve!
