Ingredients of Pahadi Kebab

  • 500 gms Boneless Chicken chunks
  • 1/2 cup Chopped Coriander
  • 1/4 cup Chopped Mint leaves
  • 1 tbsp Chopped Ginger-garlic
  • 2-4 Green Chillies
  • 5-6 Black Peppercorns
  • 1 tbsp Lemon Juice
  • Salt according to taste
  • 2 tbsp Curd
  • 1/2 cup Ghee
  • Chaat masala (optional)

How to Make Pahadi Kebab

In a grinder, add coriander and mint leaves, chillies, ginger-garlic, black peppercorns, lime juice, curd, salt and some water. Make a fin paste out of these ingredients.

In another bowl add chicken chunks and the prepared masala and let this marinate for at least one hour.

Once the chicken is marinated, place it in a heated pan with little oil and fry until 80%done.

Take off the heat and place these chicken chunks into skewers and roast on pen flame, make sure to keep brushing these with ghee to keep the chunks moist and flavourful.

In case you don’t own skewers; you can simply roast the chicken pieces in a pan. Take a non-stick pan and place the already cooked chicken pieces on it. Don’t add any oil, just the chicken pieces.

Cook on high heat for 2 minutes on each side until charred evenly. Now lower the heat and pour some ghee on top of each piece. Cook for another minute and you are done.
