Nothing like fresh pesto sauce! Toss it up with penne and throw in some smoked chicken and plump cherry tomatoes, and you have an immensely satisfying treat right there!

Ingredients of Pesto Penne Pasta with Smoked Chicken

  • 100 gm penne pasta
  • 1 cup cherry tomatoes, halved
  • ½ cup smoked chicken
  • 2 Tbsp parmesan, grated
  • Salt to taste
  • For the pesto sauce
  • A bunch of fresh basil leaves
  • 2-3 garlic cloves
  • 1 Tbsp pine nuts
  • ¼ cup Parmesan
  • ½ cup olive oil

How to Make Pesto Penne Pasta with Smoked Chicken

  • 1.1. Boil water in a sauce pan. Add the penne pasta and let it cook till al dente. Drain and cool.
  • 2.2. For the pesto sauce, mix all the ingredients, except olive oil, in a blender. Add the oil, a little at a time to emulsify, and continue blending until all the ingredients come together. Keep aside.
  • 3.3. Toss the pasta in pesto sauce along with cherry tomatoes and smoked chicken. Check seasoning. Finish with a sprinkle of Parmesan on top.
