Ingredients of Praline
- 2 1/2 cups granulated sugar
- 1 cup cream
- 1 Tbsp butter
- 2 cups walnut/almonds - broken into 2-3 pieces

In a pan, combine two cups of the sugar with the cream and butter, and bring to a boil over medium heat.
In a separate pan, melt the remaining sugar and cook it until it becomes caramel in colour.
Add the cream, butter and sugar syrup to the caramel mixture.
Add the nuts and cook the mixture to the soft-ball stage - when you drop a little mixture into cold water, it should form into a ball, which is soft and not very hard.
Remove the pan from the heat and beat the mixture until it thickens.
Drop spoonfuls of the mixture onto wax paper to form pralines about 2 to 3 inches in diameter.
Let the pralines harden.
