How to Make Rajgira Kadhi

Rajgira Kadhi Recipe: Rajgira kadhi is a vrat-friendly dish you can easily prepare during Navratri. Even when you are not fasting, this healthy kadhi is a great choice, as it is full of nutrients. Since this is a vrat ki kadhi, it does not contain turmeric (haldi) as many other types of kadhi do.

Ingredients of Rajgira Kadhi

  • 1 Cup dahi (curd)
  • 3/4 cup water
  • 1/4 cup rajgira atta (amaranth flour)
  • 1 tsp jeera (cumin seeds)
  • ½ inch ginger , grated
  • 2 green chillies
  • 1/2 tsp sugar
  • Rock salt (sendha namak) to taste
  • 2 tbsp ghee
  • Coriander leaves for garnish

How to Make Rajgira Kadhi

Mix the rajgira atta and dahi in a bowl. Add a little water to smoothen the mixture. Whisk well to ensure zero lumps.

In a kadhai or heavy-bottomed pan, heat 1-2 tbsp of ghee and add in the jeera. Saute lightly until they are fragrant.

Once the seeds crackle, add the grated ginger and crushed chillies. Saute on a medium flame for a minute or so.

Add the rajgira-curd mixture prepared earlier. Lower the flame and stir well to mix all the ingredients.

Season with sugar and rock salt as required.

Allow the kadhi to simmer and turn thick. Stir occasionally to avoid lumps.
7.
Garnish the rajgira kadhi with chopped coriander leaves. Serve with vrat ka paratha, kuttu ki puri or sama khichdi.
