Ingredients of Haryanvi Kadhi

  • 1 Cup besan (gram flour)
  • 2 cups yogurt
  • 4 cups water
  • 1 tsp cumin seeds
  • 1/2 tsp fenugreek seeds
  • 1/4 tsp asafoetida
  • 1 tsp turmeric powder
  • 1 tsp red chili powder (adjust to taste)
  • Salt to taste
  • 1 cup pakoras (onion besan fritters)
  • For Tadka (Tempering):
  • 2 tbsp ghee (clarified butter)
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 2 dried red chilies

How to Make Haryanvi Kadhi

In a mixing bowl, whisk together besan and yogurt until smooth.

Gradually add water, stirring continuously to avoid lumps.

In a large pot, heat the mixture over medium heat, stirring constantly.

Add cumin seeds, fenugreek seeds, asafoetida, turmeric powder, red chili powder, and salt.

Bring the kadhi to a boil, then reduce heat and let it simmer until it thickens, stirring occasionally

While the kadhi is simmering, add the onion pakoras to the pot.

Let the pakoras absorb the flavours of the kadhi and soften.

In a small pan, heat ghee over medium heat.

Add mustard seeds and cumin seeds. When they splutter, add dried red chilies.

Allow the tadka to infuse for a minute, releasing its aromatic flavors.

Pour the prepared tadka over the simmering kadhi, stirring gently to incorporate the flavours.
12.
Let the kadhi simmer for a few more minutes until it reaches the desired consistency.
13.
Ladle the hot Haryanvi Kadhi into serving bowls.
14.
Garnish with fresh coriander leaves.
