Soak the chana dal for around half an hour. Drain the water and coarsely crush the dal along with the roasted peanuts and curry leaves.
In a bowl, combine the rice flour and chana dal-peanut mixture along with the rest of the ingredients (except oil).
Add water, little by little, to form a smooth dough. Add 2 tbsp oil/ ghee and knead well. Let it rest for 10 minutes.
Break off small pieces of the dough and flatten them till you get a thick pancake-like shape.
Heat oil on a tawa/ pan. Place the flattened dough on top and poke small holes into its surface. Sprinkle a little oil into the holes.
Cover and let the dough cook on a medium flame for around 5 minutes. Then flip and roast (uncovered) until the other side also turns crisp.
Serve the sarva pindi hot with tamarind chutney, hari chutney, spicy garlic chutney or any other.
