How to make Satay Chicken Curry
This recipe is for all the Satay lovers! It is made with ingredients which you will find in your pantry and it’s so simple to make at home. The rich and creamy coconut is a taste profile everyone is familiar with. The chicken is first marinated in a lovely sauce full of satay flavours and seared in that sauce for extra punch. It has got all those notes of spice, nuts, sweet and savory.

Ingredients of Satay Chicken Curry
- 300 Gram Chicken Breast
- 500 ml Coconut Milk
- 1.2 tbsp Brown Sugar
- 4 tbsp Soya Sauce
- 1 tbsp Tamarind Paste
- 5.5 tbsp Thai Red Curry Paste
- 3 tbsp Chilli Chutney Peanut Butte
- 3 tbsp Sriracha Sauce
- 3 tbsp Oil
- 6-7 Garlic Cloves(finely chopped)
- Red Jalapeno (deseeded, finely chopped)
- For Garnishing:
- Chopped Coriander
- Red Jalapeno (in full circles)
How to Make Satay Chicken Curry

Cooking Instructions:
For the marinate (previous night)
In a bowl mix the following until it’s runny and set aside:
Coconut milk – 100ml
Chilli Chutney Peanut Butter – 2 tbsp
Brown sugar – 1/2 tbsp
Thai Red Curry Paste – 2.5 tbsp
Soy sauce – 2 tbsp

Add 300 grams of medium size chopped chicken. If you want a faster cook, you can cut the chicken into smaller pieces.

Once mixed, let this marinate overnight for about 12 hours so that the chicken absorbs all those nutty flavors and spices.

For Spicy Peanut Sauce:
In a bowl mix the below ingredients well and set aside:
Coconut milk – 400ml
Chilli Chutney Peanut Butter – 1tbsp
Soy sauce – 2 tbsp
Brown sugar – 1 tbsp
Thai Red Curry Paste – 3 tbsp
Tamarind paste – 1 tbsp
Sriracha sauce – 3 tbsp

Final Steps:
Add 1 tbsp of oil to a hot pan. Add the marinated chicken and let it cook for 6-7 minutes. Once cooked 80%, set it aside in another bowl.

Add 1 tbsp of oil to the hot pan again. Add the minced garlic and finely diced red jalapeno. When jalapenos have reduced in size, add the spicy peanut sauce made in step 4.

Simmer and reduce till the gravy is thicker, now add the cooked chicken.

You can plate this delicious spicy chicken curry on a bed of steamed rice. Garnish with coriander and some red jalapeno.
