- 380gm Strawberry puree
- 50gm Water
- 134gm Sucrose #1
- 10gm Apple pectine
- 170gm Sucrose #2
- 70gm Sorbitol
- 150gm Glucose powder
- 9gm Citric acid

In a pot bring purée and water to 40C. Add sucrose #1 previously mixed with the pectin.
Once it comes to a boil, start adding slowly the rest of the sugars mixed together, always keeping the boil. Cook to 106C.
Off the heat, add citric acid solution and pour on a silpat.
Let it set for 2 hours, cut it into cubes and coat it with castor sugar.
