How to Make Thapi Vadi

Thapi Vadi Recipe: Also known as besan vadi or patwadi, thapi vadi is a yummy Maharashtrian delicacy. Bursting with flavour, this besan snack does not require deep-frying or steaming. You can pair this vadi with chutneys or curries.

Ingredients of Thapi Vadi

  • 1 Cup besan
  • 2 cups water
  • 1/4 tsp mustard seeds
  • 1/4 tsp cumin seeds
  • 1/4 tsp white sesame seeds
  • 1/4 tsp fennel seeds
  • 8 garlic cloves
  • 1-inch ginger
  • 6 green chillies
  • 1 sprig of curry leaves
  • 1/4 tsp asafoetida
  • 1/2 tsp turmeric powder
  • 2 tbsp oil
  • Salt to taste
  • 1 tbsp grated coconut (for garnish)
  • 1 tbsp coriander leaves (for garnish)

How to Make Thapi Vadi

In a large bowl, mix the besan with 1 cup of water to form a smooth batter. Set aside for 10 minutes.

Coarsely grind ginger, garlic, green chillies, curry leaves and fennel seeds together. Avoid using water.

In a non-stick kadhai, heat oil. Add mustard seeds, cumin seeds and asafoetida.

Add the ground masala paste to the kadhai. Mix well.

Add turmeric powder and salt. Then add the remaining 1 cup of water, stir and bring to a boil.

Now, lower the flame and pour in the besan batter prepared earlier, while stirring continuously. Take care that lumps are not formed.

Continue mixing for around 5 minutes till the mixture thickens. It will get a sticky dough-like consistency.

Grease a thali and transfer the vadi mixture to it. Flatten it carefully using your palm/ bottom of a bowl/ spatula. Whatever you use, ensure it is also greased.
9.
Spread the mixture evenly. Garnish with coconut, coriander and sesame seeds. Press these lightly into the mixture.
10.
Allow to cool for 5 minutes and then cut into the desired shapes (diamond/ square/ triangle). The besan vadi is ready to eat.
