How to Make Vichyssoise Soup
1.Heat the butter in a deep saucepan and saute the onions till soft.
2.Add the potatoes and stir for a few minutes.
3.Then add the leeks and salt.
4.Continue to stir till soft.
5.Pour in the vegetable stock and some pepper, bring it to a boil and simmer till the potatoes are cooked.
6.Now puree it in a mixie, add the cream and let it cool in a fridge.
7.Cut the bacon into small pieces and fry in a pan till crisp.
8.Sprinkle over the soup as garnish and serve hot.
