Greek Cake

A moist and delicious Greek cake made with semolina and citrus flavors. Topped with pomegranate kernels and rum.

Ingredients

  • 100 gm butter
  • 100 gm castor sugar
  • Grated rind 1 orange
  • Juice 1 lemon
  • 2 eggs
  • 150 gm semolina
  • 2 tsp baking powder
  • 100 gm almond powder
  • 1 tsp cinnamon powder

  • Syrup:
  • 150 gm sugar juice
  • 1 lemon juice
  • 1/2 orange
  • 1 Tbsp candied peel

  • To Serve:
  • 6 Tbsp pomegranate kernels
  • 1 Tbsp rum / orange juice
  • Mint sprigs

How to Make Greek Cake

  1. Blend all the cake ingredients together and beat for 1 minute.
  2. Turn into a greased and lined 8" round tin and bake at 210 degrees C for 10 minutes and then for 25 minutes at 180 degrees C.
  3. Turn out of tin.
  4. Simmer the syrup ingredients together for 5 minutes and pour over cake.
  5. Serve with pomegranate mixed with rum.
  6. Serve garnished with mint sprigs.
