Udon Noodles Salad

  • Vegetables and assorted dressing mixed in with udon noodles to create a scrumptious treat.

Ingredients

  • 100 gms udon noodles
  • 1/2 medium raddish
  • 1/2 zucchini
  • 1/2 yellow squash
  • 1/2 cucumber
  • 1/2 bell pepper
  • 3 soaked shitake mushrooms
  • 1/2 carrot
  • 1/2 medium spring onion or scallion
  • 1 tsp light soy sauce
  • 1 tsp rice vinegar
  • 1 tsp vegetarian oyster sauce
  • 1/2 tsp sushi vinegar
  • 2 Tbsp vegetable oil

Method

  1. Cook udon noodles in boiling water for 5 minutes.
  2. Drain out the water.
  3. Rest the noodles in a bowl.
  4. Use a spaghetti peeler to peel cucumber, yellow squash, medium size radish, carrot, a scallion and shitake mushrooms, half a red bell pepper finely chopped; add all the veggies to the bowl.
  5. Mix well. 
  6. For the vinaigrette (oriental inspired vinaigrette): a tablespoon of sushi vinegar, 1 teaspoon of
    light soy sauce, 1 teaspoon of vegetarian oyster sauce, 2 tablespoons of vegetable oil, give it a mix.
  7. Season with salt to taste.
  8. Add the udon noodles to the veggies, and mix with the vinaigrette.
  9. A few sprigs of coriander.
  10. Mix with the veggies.
  11. Serve on a flat plate.
