Yellow Chilli Mayo with Veggies
  • Cook Time:
  • Egg-less mayonnaise infused with the flavors of yellow chilli and parsley. Top this tangy mayo over grilled mushrooms, cauliflower and radish or veggies of your choice.


  • For Eggless Mayo:
  • Juice of 1 lemon
  • 125 ml soy milk
  • 1/2 Tbsp salt
  • 1/2 Tbsp paprika
  • 1 Tbsp mustard
  • 60-80 ml olive oil
  • 1 big pinch white pepper

  • For Yellow Chilli Mayo:
  • 1 cup mayo
  • 1/2 a yellow chilli
  • 1 handful of parsley

  • For the Vegetables:
  • 250 gm cauliflower florets
  • 150 gm button mushrooms
  • 40 gm of radish, thinly sliced


  1. For Eggless Mayo:
  2. Add all the ingredients in a blender, blend at a low speed.
  3. Gradually add the olive oil in a very slow and steady stream until the mixture begins to thicken and is smooth and lush.
  4. Store in a bottle or jar for a week in the refrigerator.

  5. For Yellow Chilli Mayo:
  6. In a blender, add the yellow chilli, parsley and mayonnaise and blend together nicely.

  7. For the Vegetables:
  8. Season boiling water with salt and blanch the cauliflower.
  9. Season the button mushrooms with salt, pepper and olive oil and grill till slightly charred.
  10. Mix the mushrooms, cauliflower and radish with the mayonnaise dressing and serve either cold or warm.
