Diwali season is here and it's time to indulge in sumptuous delicacies with your loved ones. There's something about Indian festivals that intensifies our food cravings and Diwali is no different. While there are a plethora of traditional Diwali snacks and curry options out there, one just can't resist indulging in decadent, sweet treats like barfis and rabris.
So how about preparing something unique this festive season that is both tasty and healthy at the same time?! We have a delicious vegan coconut dessert that is as dreamy as it can get and is super easy to prepare at home. This is also a great way to use coconut, which is a quintessential ingredient in many Indian sweets.
Vegan Coconut Dessert recipe is shared by famous YouTube chef Manjula Jain on her channel 'Manjula's Kitchen'. In her recipe video, Manjula has mixed soya milk and coconut milk along with sugar, coconut, pistachios and cardamom seeds. She boils it for a while and then adds agar-agar powder along with saffron before boiling it again. The mixture is then refrigerated to set like a jello.
You can make this healthier by skipping sugar and using a sugar substitute or jaggery instead. Serve this decadent dish at your next Diwali party and watch your guests drooling over it.
